- 1 onion, diced
- 1 lb Ground Beef
- 1 tsp Olive Oil
- 2 Garlic cloves, minced
- 1 Cup Beef Broth
- 1.5 tbsp Flour
- 1.5 Cups of Frozen Vegetable Medley
- 2 tsp Worcestershire sauce
- 3-4 tbsp Tomato Paste
- 1 tsp Oregano
- ½ tsp Kosher Sale
- ½ tsp Cracked Pepper
- 1.5 Cups Shredded Cheddar Cheese
- Half Package of Frozen Tater Tots
- Sour Cream, optional
- Preheat oven to 350.
- Add olive oil to large skillet over medium high heat. Once oil is sizzling, add onion and cook until translucent, around 3-4 minutes. Add the ground beef, season with salt and pepper and cook until browned. Drain excess grease.
- Reduce heat to medium, add garlic and cook for 1 minute or until fragrant. Then, add flour and stir to combine. Next, add broth, vegetables, tomato paste,, Worcestershire and oregano. Stir to combine and cook about 3-5 minutes more or until most of the liquid is absorbed.
- Transfer meat mixture to 9” pie dish or 9×9” square greased baking dish. Spread the mixture evenly around the pan. Layer the tater tots to cover. Place in the oven and bake 35-40 minutes, or until the tops of the tater tots are golden brown and crispy.
- Remove dish from oven, sprinkle shredded cheddar cheese and return to oven. Broil 2-3 minutes or until cheese is melted and bubbly, watching closely so you don’t burn.
- Take out of the oven and allow dish to cool 5 minutes before serving. Top with a dollop of sour cream if desired.
