· lb Ground Beef
· 1 Small Onion, diced
· 1 Packet Taco Seasoning
· 1 can Black Beans, drained and rinsed
· 1 can Rotel
· Medium Tortillas, cut into quarters
· 1 Cup Shredded Cheese (Tex-Mex blend)
· Toppings: Avocado, Cilantro, Sour Cream, Salsa etc.
- Preheat oven to 450 degrees.
- Cook the beef and onions over medium high heat in a large oven safe skillet. Add the spice packed and stir it combine. Cook for 6-8 minutes, or until beef has cooked through. Drain any excess fat.
- Add the black beans and Rotel and stir to combine and heat throughout. Then, top with cheese and transfer to the oven. Allow the cheese to melt, around 3-4 minutes. Then switch to broil and cook an additional 1 minute to give a nice bubbly and browned top.
- Warm tortillas in oven for 2-3 minutes.
- Scoop taco filling into warm tortillas. Top with desired toppings and serve immediately.
