Fixin’ Supper

MARLEY CHICKEN BURRITOS / BURRITO BOWLS

  • 4-6 Chicken Thighs
  • Jerk Seasoning
  • Pineapple, diced
  • Cilantro, chopped
  • 1 can Black Beans, drained and rinsed
  • Extra Large Tortillas (optional for burrito)
  • 1 Package Cilantro Lime Rice, cooked according to package instructions (optional, for burrito bowl)
  • 8 oz Pepper Jack Cheese, shredded (sub Monterey Jack for a non spicy alternative)
  • Sour Cream, for dipping/topping
  1. In a medium bowl, season chicken thighs liberally with jerk seasoning and toss to coat. You can grill the chicken or cook on the stovetop on medium high heat in a skillet with a little olive oil. Cook until internal temperature is 165 degrees, set aside to rest.
  2. Once chicken has rested, chop or dice the chicken. Then, assemble your burritos or burrito bowls with desired toppings (pineapple, cilantro, black beans, cheese and rice).
