- 4-6 Chicken Thighs
- Jerk Seasoning
- Pineapple, diced
- Cilantro, chopped
- 1 can Black Beans, drained and rinsed
- Extra Large Tortillas (optional for burrito)
- 1 Package Cilantro Lime Rice, cooked according to package instructions (optional, for burrito bowl)
- 8 oz Pepper Jack Cheese, shredded (sub Monterey Jack for a non spicy alternative)
- Sour Cream, for dipping/topping
- In a medium bowl, season chicken thighs liberally with jerk seasoning and toss to coat. You can grill the chicken or cook on the stovetop on medium high heat in a skillet with a little olive oil. Cook until internal temperature is 165 degrees, set aside to rest.
- Once chicken has rested, chop or dice the chicken. Then, assemble your burritos or burrito bowls with desired toppings (pineapple, cilantro, black beans, cheese and rice).
