CAJUN SALMON

  • 4 Salmon Filets
  • 1-2 tbsp Cajun Seasoning
  • 6 tbsp Butter
  • 1 tbsp Olive Oil
  • 3 tbsp Honey
  • Salt & Pepper
  1. Pat dry salmon filets. Season with salt, pepper and Cajun seasoning to taste (more Cajun = spicier).
  2. Use an electric hand mixer to whip 5 tbsp of the butter until light and fluffy, about 2 minutes. Then, add honey and blend until smooth. Mix 1 tbsp Cajun seasoning and stir to combine.
  3. In a large skillet, heat the olive oil and the remaining 1 tbsp of butter over medium heat. Start with skin side facing down and sear for 3-4 minutes. Flip and sear another 2-3 minutes or until internal temperature reaches 135 degrees (for a medium +). 
  4. Remove fish from heat and add a dollop of cajun butter to each filet. Allow to melt and use a spoon to baste the salmon filets. Remove skin before serving, if desired.
