BAHN MI SANDWICHES
- 1 Teriyaki Pork Tenderloin, sliced into thin strips
- 2 French Baguettes
- 1 Cucumber, cut into matchsticks
- 2 Carrots, cut into matchsticks
- 1 Jalapeno pepper, sliced
- ½ Cup Sugar
- ½ Cup Water
- ½ Cup Vinegar
- 1 Bunch Cilantro, loosely chopped
- 3 tbsp Mayonnaise
- 1 tbsp Sriracha
- 1 tbsp Fish Sauce
- 2 tbsp Soy Sauce
- 1 tbsp Canola Oil
- In a small saucepan, combine water and vinegar and bring to a light boil. Add sugar and dissolve completely. Allow to cool slightly and pour over your jalapenos, cucumbers and carrots. Refrigerate for at least one hour.
- Pour fish sauce and soy sauce over pork strips and stir to combine. Marinate in refrigerator while your vegetables are pickling.
- Heat castiron skillet over medium high heat and add oil. Working in batches, fry your pork strips until cooked through and golden brown. Be sure not to overcrowd your pan so you get a nice crust on your pork. Remove cooked pork to a paper towel lined plate.
- Cut your baguette into 6-8” lengths and split lengthwise. In a small bowl, mix mayonnaise and Sriarcha sauce (adjust Sriarhca to your spice preference). Spread sriracha mayo on your bread, layer with pickled vegetables, pork and garnish with cilantro.
