- 1 lb Kielbasa Sausages, sliced
- 1 Zucchini, sliced into half moons
- 1 Large Sweet Potato, cubed
- 1 tbsp Olive Oil
- Salt & Pepper
- 1/4 tsp Oregano
- 1/4 tsp Cinnamon
- 1 tbsp Brown Sugar
- Preheat oven to 400° using Convection setting if you have the option on your oven.
- On a large sheet pan, arrange vegetables and sausages, keeping like items with like.
- Drizzle olive oil, salt and pepper on entire pan and use hands to toss.
- On just the sweet potato portion, add cinnamon and brown sugar, toss to combine.
- Cook for ~15 minutes and check for doneness. Toss with spatula and roast another 5 minutes until soft.
